A yummy mince pie filling just in time for Christmas!!

Mince Pie Filling:

We ran out of mince pies! No matter! Well, whip up our own! Usually, the fruit would have to soak for a day + in brandy/liqueur. But cooking the fruits until soft speeds things up a bit.

Ingredients:

2 cups chopped dried apricots

2 cups raisins1 cup dried cranberries

2 medium apples cored, peeled & chopped

1 lemon zest & juiced1 orange zest & juiced

1/2 cup soft brown sugar

1tsp ground Cinnamon 1tsp ground Ginger

1.5 tsp Nutmeg  

Boil for 20 minutes until soft.

Add 1/2 cup mixed peel

Crystallized ginger

Brandy/orange liqueur


Jar up. Can be water bathed for 10 minutes to store in pantry. But this batch is heading straight into mince pies. So will wait it out in the fridge.

Mince Pie Pastry:

Mince Pies 🥧 -you won't be sorry for baking these! You may never want to eat shop bought once ever again.

Pastry dough recipe:

350g flour + extra for flooring surface

Pinch of salt

225g butter

Mix this until it looks like wet sand

Add

100g Castor sugar

3-4 tbsp water

Mux until pliable dough

Roll out on floured surface & cut circles.

Place in shallow cupcake baking trays.

Pat down carefully to fill the shape.

Scoop mincemeat mixture from yesterday into the little pies.

Cut out Christmas tops -we used stars.

Brush with milk.

Sprinkle with little bit of granulated sugar.

Bake 15-20 mins
